  • 1 cup basil pesto (store-bought or homemade)
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

  • Cherry tomatoes, halved for garnish (optional)

Instructions

  1. Prepare zucchini noodles: Spiralize the zucchinis using a spiralizer or a vegetable peeler to create noodle-like strands.
  2. Sauté garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add zucchini noodles: Add the spiralized zucchini to the skillet. Cook for 2-3 minutes, tossing occasionally, until the noodles are just tender but still have some crunch.
  4. Mix in pesto: Remove the skillet from heat, and stir in the pesto until the zucchini noodles are well coated. Season with salt and pepper to taste.
  5. Serve: Plate the zucchini noodles and garnish with grated Parmesan cheese and halved cherry tomatoes, if desired. Enjoy immediately!
