  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Parmesan cheese for serving (optional)

Instructions

  1. Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  2. Add Vegetables: Stir in the bell pepper, zucchini, and cherry tomatoes. Cook for about 5 minutes until slightly softened.
  3. Cook Pasta: Add the pasta, vegetable broth, heavy cream, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer, stirring occasionally, until the pasta is cooked and the sauce has thickened (about 10-12 minutes).
  4. Serve: Once cooked, remove from heat. Top with fresh basil and grated Parmesan cheese if desired. Serve immediately.
