  • 1 cup cooked chicken, shredded
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1/2 cup bell peppers, diced
  • 1/4 cup onion, finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning
  • Salt and pepper to taste
  • Sour cream, salsa, or guacamole for serving

Instructions

  1. Prep the Filling: In a skillet, heat olive oil over medium heat. Add the onions and bell peppers, sautéing until softened (about 3-4 minutes). Stir in the shredded chicken, taco seasoning, and season with salt and pepper. Cook for another 2-3 minutes until heated through.
  2. Assemble the Quesadillas: Lay one tortilla in a clean skillet over medium heat. Sprinkle half of the cheese evenly over the tortilla, then spread the chicken mixture over the cheese. Top with the remaining cheese, and cover with the second tortilla.
  3. Cook Until Golden: Cook the quesadilla for about 3-4 minutes on one side until golden brown. Carefully flip it over and cook for another 3-4 minutes on the other side until the cheese is melted and the tortilla is crispy.
  4. Serve: Remove from the skillet and let it cool slightly before cutting into wedges. Serve with salsa, guacamole, or sour cream on the side.
