A hearty and flavorful taco filled with roasted sweet potatoes, black beans, and a zesty lime crema.

Ingredients

  • 2 medium sweet potatoes, diced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 cup black beans, rinsed
  • 8 small corn tortillas

For the Lime Crema:

  • 1/2 cup vegan sour cream
  • 1 tbsp lime juice
  • 1 tsp lime zest

Instructions

  • Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, smoked paprika, and cumin. Roast for 20 minutes until tender.
  • Warm tortillas in a skillet or microwave.
  • Fill each tortilla with roasted sweet potatoes, black beans, and a drizzle of lime crema.

 

  • Garnish with fresh cilantro and serve.

Notes

  • Add avocado or pickled onions for extra flavor.
