- 2 medium sweet potatoes, diced

- 1 tsp smoked paprika
- 1 tsp cumin
- 1 cup black beans, rinsed
- 8 small corn tortillas
For the Lime Crema:
- 1/2 cup vegan sour cream
- 1 tbsp lime juice
- 1 tsp lime zest
Instructions
- Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, smoked paprika, and cumin. Roast for 20 minutes until tender.
- Warm tortillas in a skillet or microwave.
- Fill each tortilla with roasted sweet potatoes, black beans, and a drizzle of lime crema.
- Garnish with fresh cilantro and serve.
Notes
- Add avocado or pickled onions for extra flavor.
- Use flour tortillas if preferred.
