- 4 large bell peppers (any color)
- 1 lb ground turkey
- 1 cup cooked rice
- 1 small onion, diced
- 1 cup marinara sauce
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 cup shredded mozzarella cheese
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds. Set aside.
- Heat olive oil in a skillet. Sauté onion, then add ground turkey and cook until browned.
- Stir in rice, marinara sauce, garlic powder, smoked paprika, salt, and pepper.
- Stuff the mixture into the bell peppers and place them in a baking dish.
- Top with shredded mozzarella and bake for 25-30 minutes until the peppers are tender and the cheese is melted.

- Substitute ground turkey with ground beef or chicken.
- Use quinoa instead of rice for a healthier option.
