Colorful bell peppers stuffed with a savory mixture of ground turkey, rice, and spices, baked to perfection and topped with melted cheese.

Ingredients

  • 4 large bell peppers (any color)
  • 1 lb ground turkey
  • 1 cup cooked rice
  • 1 small onion, diced
  • 1 cup marinara sauce
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 cup shredded mozzarella cheese
  • 1 tbsp olive oil

 

  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove seeds. Set aside.
  • Heat olive oil in a skillet. Sauté onion, then add ground turkey and cook until browned.
  • Stir in rice, marinara sauce, garlic powder, smoked paprika, salt, and pepper.
  • Stuff the mixture into the bell peppers and place them in a baking dish.

 

  • Top with shredded mozzarella and bake for 25-30 minutes until the peppers are tender and the cheese is melted.

Notes

  • Substitute ground turkey with ground beef or chicken.

 

  • Use quinoa instead of rice for a healthier option.
