These cauliflower bites are crispy on the outside and tender on the inside, tossed in a zesty buffalo sauce that packs a punch. They make for a great snack or appetizer and can easily be served alongside celery sticks and blue cheese dressing for dipping.

Ingredients

  • 1 large head of cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1 cup water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup buffalo sauce
  • Cooking spray or oil for baking

Instructions

  1. Preheat the Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. Prepare the Batter: In a mixing bowl, whisk together flour, water, garlic powder, onion powder, paprika, salt, and pepper until smooth.
  3. Coat the Cauliflower: Dip each cauliflower floret into the batter, allowing any excess to drip off. Arrange the coated florets on the prepared baking sheet.
  4. Bake: Spray the coated cauliflower bites with cooking spray or drizzle with oil. Bake for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
  5. Toss in Sauce: Remove the cauliflower from the oven and toss them in the buffalo sauce until evenly coated.
  6. Final Bake: Return the sauced cauliflower to the oven for an additional 10 minutes to set the sauce.
  7. Serve: Enjoy hot with your favorite dipping sauce, such as ranch or blue cheese, and celery sticks.
