A creamy, cheesy Italian classic made with crispy pancetta, eggs, and Parmesan cheese, tossed with al dente spaghetti.

Ingredients

  • 12 oz spaghetti
  • 4 oz pancetta, diced
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 2 garlic cloves, minced

 

  • Salt and pepper to taste

Instructions

  • Cook spaghetti until al dente. Reserve ½ cup pasta water.
  • Sauté pancetta in a skillet until crispy. Add garlic and cook for 1 minute.
  • Whisk eggs and Parmesan in a bowl.

 

  • Toss hot spaghetti with pancetta and egg mixture, adding pasta water as needed. Serve immediately.

Notes

  • Use guanciale for a traditional touch.
