Chia Pudding Parfait

A no-cook, make-ahead breakfast with layers of chia pudding, berries, and granola.

  • Total Time: 5 minutes

Ingredients

Units Scale
  • 1/4 cup chia seeds
  • 1 cup coconut milk (or almond milk)
  • 1 tbsp honey or maple syrup
  • 1/2 cup mixed berries
  • 1/4 cup granola

 

  • 1 tbsp shredded coconut (optional)

Instructions

  • Whisk chia seeds, milk, and sweetener in a jar. Refrigerate overnight (or at least 4 hours).
  • Layer pudding with berries and granola in glasses.

 

  • Top with coconut and extra berries.

Notes

Use yogurt for a thicker parfait.
