
Chia Pudding Parfait
A no-cook, make-ahead breakfast with layers of chia pudding, berries, and granola.

- 1/4 cup chia seeds
- 1 cup coconut milk (or almond milk)
- 1 tbsp honey or maple syrup
- 1/2 cup mixed berries
- 1/4 cup granola
- 1 tbsp shredded coconut (optional)
Instructions
- Whisk chia seeds, milk, and sweetener in a jar. Refrigerate overnight (or at least 4 hours).
- Layer pudding with berries and granola in glasses.
- Top with coconut and extra berries.
Notes
Use yogurt for a thicker parfait.
