- 2 green onions, sliced
- 2 cloves garlic, minced
- 2 eggs, beaten
- 3 tablespoons soy sauce or tamari for a gluten-free option
- Salt and pepper to taste

Instructions
- Prepare the Cauliflower: Remove the leaves and stem from the cauliflower and cut it into florets. Pulse in a food processor until it resembles rice, or grate it using a box grater.
- Heat the Oil: In a large skillet or wok, heat the vegetable or sesame oil over medium-high heat.
- Sauté the Vegetables: Add the mixed vegetables and garlic to the skillet. Sauté for about 2-3 minutes until they are tender and fragrant.
- Add the Cauliflower: Stir in the riced cauliflower and soy sauce. Cook for 5-7 minutes, stirring frequently, until the cauliflower is tender and heated through.
- Scramble the Eggs: Push the cauliflower and veggies to one side of the skillet. Pour the beaten eggs onto the empty side and scramble until fully cooked. Mix everything together.
- Season and Serve: Add sliced green onions, season with salt and pepper, and mix thoroughly. Serve hot, optionally topped with your choice of cooked protein.
