A hearty, portable burrito stuffed with scrambled eggs, black beans, and roasted potatoes.

  • 2 large tortillas
  • 3 eggs, scrambled
  • 1/2 cup black beans, drained
  • 1/2 cup roasted potatoes
  • 1/4 cup shredded cheese
  • 2 tbsp chipotle mayo
  • 1/4 avocado, sliced

 

  • Fresh cilantro

Instructions

  • Warm tortillas. Layer with eggs, beans, potatoes, cheese, and avocado.
  • Drizzle with chipotle mayo and cilantro.

 

  • Roll tightly and grill seam-side down for 1-2 mins to seal.

Notes

Add sautéed peppers for extra veggies.
