- 1/2 cup roasted potatoes

- 2 tbsp chipotle mayo
- 1/4 avocado, sliced

Instructions
- Warm tortillas. Layer with eggs, beans, potatoes, cheese, and avocado.
- Drizzle with chipotle mayo and cilantro.
- Roll tightly and grill seam-side down for 1-2 mins to seal.
