A creamy, protein-packed chickpea salad with mashed avocado, perfect for sandwiches or wraps.

Ingredients

  • 1 cup cooked chickpeas, mashed
  • 1 large avocado, mashed
  • 1 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1/4 cup red onion, diced
  • 2 tbsp fresh parsley, chopped

 

  • 4 slices whole-grain bread

Instructions

  • In a bowl, mix mashed chickpeas, avocado, lemon juice, mustard, red onion, and parsley.
  • Spread the mixture onto two slices of bread and top with the remaining slices.

 

  • Slice in half and serve.

Notes

  • Add sliced cucumber or tomato for extra crunch.
