- 1 large avocado, mashed
- 1 tbsp lemon juice
- 1 tbsp Dijon mustard
- 1/4 cup red onion, diced
- 2 tbsp fresh parsley, chopped
- 4 slices whole-grain bread
Instructions
- In a bowl, mix mashed chickpeas, avocado, lemon juice, mustard, red onion, and parsley.
- Spread the mixture onto two slices of bread and top with the remaining slices.
- Slice in half and serve.
