Ingredients
● 4 small tortillas (corn or flour)
● 1 cup grilled shrimp (or plant-based shrimp alternative)
● 1/2 cup pickled red onions
● 1/4 cup crumbled feta cheese (or vegan feta)
● 1 avocado, mashed with lime juice and salt
● Cilantro leaves for garnish
Instructions
1. Heat tortillas in a dry skillet over medium heat until warm and slightly charred. Set aside.
2. Grill shrimp with olive oil, salt, pepper, and paprika for about 3–4 minutes per side until cooked through.
3. Spread mashed avocado on each tortilla as a base layer.
4. Add grilled shrimp, pickled red onions, and crumbled feta cheese on top.
5. Garnish with fresh cilantro leaves and serve immediately.
