A light and refreshing lunch featuring spiralized zucchini noodles tossed in a vibrant basil pesto and topped with juicy cherry tomatoes.

Ingredients

  • 2 medium zucchinis, spiralized
  • 1 cup cherry tomatoes, halved
  • 1/4 cup vegan basil pesto
  • 1 tbsp olive oil

 

  • 2 tbsp pine nuts (optional)

Instructions

  • Heat olive oil in a skillet over medium heat. Add zucchini noodles and sauté for 2-3 minutes until slightly softened.
  • Remove from heat and toss with basil pesto.

 

  • Top with cherry tomatoes and pine nuts. Serve immediately.

Notes

  • Add grilled tofu or chickpeas for extra protein.

 

  • Use store-bought pesto or make your own for a fresher flavor.
