A quick and cheesy quesadilla filled with spinach, feta, and mozzarella, perfect for a satisfying lunch.

Ingredients

  • 4 whole-grain tortillas
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese

 

  • 1 tbsp olive oil

Instructions

  • Heat a skillet over medium heat and add olive oil.
  • Place one tortilla in the skillet and sprinkle with spinach, feta, and mozzarella.
  • Top with another tortilla and cook for 2-3 minutes on each side until golden and crispy.

 

  • Slice into wedges and serve.

Notes

  • Add sun-dried tomatoes or olives for extra flavor.

 

  • Serve with a side of tzatziki or salsa.
